What you'll be getting:

Baked Tofu and Spinach Enchiladas 

Per Serving

150 g baked tofu with caramelized onions and spinach

70 g shredded cheese (blend of 4 cheeses)

2 T sour cream

1/4 c finishing sauce (a bit spicy for those of you that like heat)

1/2 c MILD enchilada sauce

3 corn tortillas

Equipment needed: a casserole dish

Preheat oven to 400. 

There are 2 different ways you can construct this meal. Option A is the more traditional way of making enchiladas, Option B is slightly easier.
