What you'll be getting:
Jackfruit Green Thai Curry

Per Serving:
100 g young jackfruit
1 t coconut oil
3/4 c cooked jasmine rice
125 g veggies (bok choy, cabbage, celery, broccoli, carrots, green onions, green beans)
1/2 c sauce (coconut milk, green curry paste, sugar, liquid aminos, garlic, ginger)
Equipment needed:
1 pan large enough for the jackfruit and other veggies
Heat up your pan. When hot, add the coconut oil that is in the container that has the jackfruit. When the oil has melted, add the jackfruit. Saute for 3-5 minutes, or until you notice the jackfruit getting a little color.

Add 1/3 c of water per serving to the pan, this will help steam the veggies and will make them cook faster. Place a lid on the pan and let them steam for 5-10 minutes. You want to steam until the celery and beans are tender.
After the jackfruit gets some color, add the veggies.


Mix everything together and remove from the heat. The rice is fully cooked and just needs to be warmed. Place the lid back on your pan while the rice is warming.
When the veggies are tender add the sauce.


Once the rice is warm you can place the curry mixture on top of the rice. From start to finish this meal takes roughly 15 minutes. Enjoy!
