What you'll be getting:
Fresh Pasta with Bacon and Winter Veggies
Per Serving:
150 g bacon
150 g veggies (cauliflower, onions, kale)
4 oz fresh pasta* (*fully cooked gf pasta provided for those with allergies)
1 T parsley sauce (parsley, lemon juice, salt, pepper, and water)
1 T parmesan cheese
Equipment needed: Pan, large enough for all of the ingredients. 1 pot of salted boiling water for the pasta
Start boiling a pot of salted water for the pasta. Start heating up your pan for all other ingredients. Once hot, add the bacon.
When the cauliflower has color to it and has started to soften, remove from the heat and add a lid to your pan. This will keep the ingredients warm until you add the pasta and will soften the cauliflower more without over cooking it. If you don't have a lid that fits your pan you can always place a clean sheet pan over top of the pan. When the water begins to boil you can add the pasta. The pasta only takes 1-2 minutes depending on how many servings you have.
Cook the bacon until it begins to take on some color and then add the veggies.
Add the parsley sauce and mix together with the pasta. The fat from the bacon and starch from the pasta will create a sauce. If you would like it "saucier" you can drizzle in a little more water to the mixture.
Once your pasta has finished cooking, add it to the bacon mixture. You can turn the heat back up to finish off the dish.
Toss everything together. From start to finish this dinner takes less than 15 minutes. Enjoy!
