What you'll be getting:

Baked Tofu Fajitas 

Per Serving

100 g marinating tofu (salsa verde, nutritional yeast, avocado oil, salt, lime juice) 

100 g veggies (onions, peppers, kale) 

cilantro

2 T sour cream 

1 T hot sauce 

2 tortillas

Equipment needed:  lined sheet pan, sautee pan

Preheat your oven to 350.  

As you are waiting for the oven to reach 350, line the tofu up on a sheet pan.  

When 5 minutes remain, start heating up your pan on high heat, add the veggies. Sautee on high heat until the timer for the tofu finishes. 

When the timer goes off, pull the sheet pan from the oven, add the tofu to the veggies. 

To finish off the fajitas, add the sour cream to the tortillas and then top with veggies and tofu. Enjoy! From start to finish this dinner takes just over 15 minutes. 

When the oven reaches 350, place the sheet pan in the oven. Set a timer for 10 minutes. 

When the timer has 2 minutes left, place the tortillas in the oven to warm. 

If you like a bit of heat, add the hot sauce to the tofu and veggies and sautee for an additional minute or so. You can also add at the end if you don't want the dish to be spicy for other family members.
