Creamy Cauliflower Pasta Bake

Per Serving

I accidentally started making this dinner

without taking a picture of the ingredients. 

125 g pasta 

1 c cauliflower sauce (roasted cauliflower, garbanzo beans, lemon juice, nutritional yeast, salt and pepper) 

125 g broccolini and kale 

Equipment needed: 1 pot large enough for all of the ingredients

You can either just heat on the stove, or place in the oven to bake. It's easiest to just heat on the stovetop, and only takes a couple of minutes. It depends on your preference.  You can preheat your oven to 375 if you'd like to bake. 

Heat up your pot (or pan). When hot, add the veggies. 

Add 1/4 c of water, per serving, and stir everything together. 

Sautee the veggies for 1-2 minutes, or until the broccolini softens, and then add the pasta. 

Stir everything together and simmer on the stovetop for 1 minute, or transfer to an oven safe dish and bake for 15 minutes. Enjoy!
