What you'll be getting:

Chicken with cheesy broccoli and quinoa bake

Per Serving

1 4 oz breast of chicken 

1/2 c cooked and seasoned quinoa

80 g blanched broccoli and spinach

40 g grated Tillamook white cheddar 

1 T half and half

Equipment needed: dutch oven, or casserole dish and pan* 

* Pan should have tight fitting lid. Please note that if you use a dutch oven, you will only have one pan to clean instead of 2.

Preheat oven to 400 degrees. 

Lightly oil a pan for searing the chicken, it's best if you use a non-stick pan for this, but if the chicken sticks, it's not a big deal. And if you have a dutch oven you can heat it up and use it to cook the chicken on your stovetop and then transfer to the oven. 

When the pan is hot, slowly place the chicken in it using tongs or a fork, being careful not to splatter oil on yourself. The chicken has been brined, no need to add any seasonings. 

The chicken is cut fairly thin and will cook quickly. Set a timer for 2 minutes (not touching the chicken during that time). When the timer goes off, flip the chicken over and set another timer for 2 minutes. 

After the second timer for 2 minutes has gone off, cover the chicken with a lid and remove from heat. Let it sit for 10 minutes covered. 

While you are waiting for your chicken to rest you can combine the quinoa and broccoli in a bowl and mix together. 

*If you are using a dutch oven you can skip this step. Wait until after you cut the chicken and you can add everything back to the dutch oven. (One less bowl to clean) 

This juice is very flavorful, after you remove the chicken put the pan back onto the heat and add the cream. 

After the 10 minutes of resting time, transfer the chicken to a cutting board. Make sure to keep all of the juice that is in the pan. 

Warm cream until it begins to bubble. You don't want to bring it to a full boil. Remove from heat and scrape bottom of the pan to make sure you have gotten all of the little bits of chicken off of the pan and into the sauce. Remove from heat.

Cut up your chicken and add to quinoa mixture. 

(If using the dutch oven, just add chicken, quinoa, cheese and broccoli to the oven and stir.) 

Add chicken to quinoa/broccoli mixture. 

Pour pan sauce over top of everything and stir.

Add cheese. 

Lightly butter, or oil, your casserole dish, add mixture and put into the oven for 10 minutes. 

Pull after 10 minutes and plate up. Depending on your oven temperature it may have to bake for an additional 5 minutes, you just want to make sure all of the cheese is melted. 

Total cook time is 25 minutes. Enjoy!
