What you'll be getting:
Cod with Roasted Veggies and Brown Rice
Per serving:
5 oz cod
3/4 c cooked golden brown rice
125 g veggies (broccoli, cauliflower, beets, carrots- tossed in oil, salt and pepper)
1/4 c seasoning sauce (lemon juice, lemon zest, salt, pepper, oil, nutritional yeast, fines herbes)

Equipment needed:
1-2 sheet pans (lined)
Preheat oven to 430 degrees.
Place your veggies on a sheet pan, I use a silicone mat so the fish doesn't stick, but it is not necessary. Set a timer for 15 minutes. For 3-4 servings I recommend 2 sheet pans.
When your timer goes off, check the fish, if it is cooked through you can warm up the rice and plate, if not, place back in the oven to finish cooking while you warm up the rice. Once fully cooked you can plate everything up and drizzle more sauce on top of the fish and veggies. From start to finish this dinner takes less than 20 minutes. Enjoy!
The fish cooks quickly (between 5-10 minutes), when 8 minutes remain on the timer place your fish on the sheet pan with the veggies. Drizzle a little seasoning sauce over top of the fish.
