IMG_0272.jpg
Per Serving:
5 oz pulled pork, braised with lemon juice, onions, jalepenos, salt, pepper and a little sugar
100 g corn salsa (corn, tomatoes, onions, parsley, lemon juice, red onions, salt, pepper, oil)
30 g lettuce
60 g guacamole (avocados, onions, oil, lime juice, cilantro)
3 tortillas

Equipment needed:1 sheet pan

Turn your broiler on high, place a rack as close to the broiler as possible. Put the pork on a sheet pan and place on the rack near the broiler. Cook until the meat begins to crisp up on the ends. You don't want the pork to get too dry, or burnt but you do want to let the meat get a little charred. This will only take a minute or two, so don't walk away from the oven for too long.

After your tortillas have been warmed you can top them with the guacamole, lettuce, pork and corn salsa. From start to finish this dinner takes less than 5 minutes. Enjoy!

While your meat is in the oven you can heat up the tortillas in a microwave for 30 sec-1 minute. If you don't have a microwave you can also warm them in the oven with the meat. When you notice the meat is ready you can pull it from the oven.
