What you'll be getting:

Mediterannean Galettes with Side Salad

Per Serving

100 g pie dough (coconut oil was used for vegan pie dough) 

100 g filling (tofu, kale, spinach, red peppers, caramelized onions, nutritional yeast, salt and pepper) 

1 c side salad 

1 T feta cheese (omitted for vegans) 

2 T salad dressing (avocado oil, red wine vinegar, balsamic vinegar, nutritional yeast, herbs de Provence)

 

Equipment needed: lined sheet pan

Preheat oven to 400 degrees.

Place galettes on a lined sheet pan. 

Top with feta. 

Set a timer for 25 minutes, place sheet pan in the oven. 

When the galettes have 5 minutes left on the timer, you can toss the salad in the dressing. Plate the salad, when the timer goes off the galettes will be ready. 

From start to finish, this meal takes 25 minutes. Enjoy.
