Lightly grease your dish with butter.
Cut the tortillas in half.
Lay half of the cut tortillas down on the dish.
Top with half of the sauce.
Layer with the tofu/spinach mixture.
Top with half of the cheese.
Add the remaining tortillas.
Finish with remaining sauce and cheese.
Place in the oven and bake for 20 minutes.
From start to finish this dish takes less than 25 minutes to make. Enjoy!
