What you'll be getting:
Pasta with Broccolini and Bacon
When your bacon has cooked fully, add the broccolini and greens.
When the pasta is done, using tongs transfer the pasta into the pan/pot of bacon and veggies. You are going to use some of the pasta water, so don't get rid of it.
Per Serving
60 g bacon
30 g diced onion
1/2 c butternut squash puree
40 g broccolini, purple broccoli, and collards
2 oz fresh pasta*

Equipment needed: 1 pot large enough for all the ingredients, 1 pot of water with some salt added for pasta
Begin heating up your pan/pot that you will be cooking your bacon in. Also, begin boiling the water. This dish is very quick as the pasta only take 2 minutes to cook. When the pot is hot, add the bacon and onions. Cook until the bacon is completely cooked and the onions start to take on some color.
When the water begins to boil, add the pasta. Set a timer for 2 minutes.
Once the pasta has been added to the mixture, add the butternut puree. Using a ladle or measuring cup, take 1/4 c of pasta water and add it to the container that had the puree, this will help get all of the puree out of the container, add to the pasta.
Stir everything together and plate up. From start to finish this dinner takes less than 10 minutes. Enjoy.
