IMG_9816.jpg
Per Serving:
200g pulled pork (pork tenderloin braised in tomatoes, onions, Ancho chili powder, Guajillo chili powder, paprika, smoked paprika, tomato powder, Cassia cinnamon, allspice powder, garlic, sea salt, Mexican oregano, cumin, salt and a little sugar)
50 g lettuce
1/3 c black bean dip (black beans, cumin, lemon juice, salt, pepper, oil, and nutritional yeast)
1/2 small avocado
3 tortillas

Equipment needed: 1 pan, preferably with a lid but not necessary.

Start heating up your pan, once hot add the pork. You want to get a little bit of a char on the meat, so don't move it around too much. Once you see most of the liquid has evaporated, place a lid on top and remove from the heat.

You can slice up your avocado and place on top of the lettuce. Finish by adding the pork to the tacos. From start to finish this dinner takes roughly 5 minutes. Enjoy!

As your pork is warming in the pan, heat up the tortillas. If they are warm they will be more pliable. Once warm, top with the bean dip and lettuce.
