Salmon with Veggies


Per Serving

5 oz salmon

1/4 c white rice

125 g veggies (broccolini, beets)

2 T seasoning sauce (lemon juice, fines herbes, avocado oil, nutritional yeast, salt, and pepper) 

1 t avocado oil

Equipment needed: sautee pan, 1 pot of water

Start boiling a pot of water for the rice, you don't need to measure it as you will be cooking the rice similarly to pasta. When it starts boiling add the rice. Set a timer for 12 minutes. 


After you have cooked your salmon, transfer it to a cutting board. Add the veggies to the pan. Add a couple of tablespoons of water to the pan to steam the veggies a bit. 

When 8 minutes remain start heating up your oil in a sautee pan. When hot, add the salmon.  Cook the salmon for 2-3 minutes on each side. 


When the timer for the rice goes off, drain and plate. 


Steam for a minute then add the seasoning sauce. 


Top the rice with the veggies and salmon. From start to finish this dinner takes under 20 minutes. Enjoy.
