What you'll be getting:
Sausage Orzo

IMG_5738.jpg
Per Serving:
4 oz Lonely Lane Sausage
125 g veggies (cabbage, peppers, red onions, cauliflower, zucchini, kale)
1/3 c orzo
2/3 c tomato sauce (tomato, onion, garlic, Italian seasoning, olive oil)

Equipment needed: 1 pan, with a lid, large enough for all of the ingredients

Heat up your pan and add the sausage once it is hot. Cook until it begins to brown.

Once the veggies are tender, add the orzo to the pan. After you add the orzo, add the sauce along with 1/3 c of water per serving. Lower the heat to a low-medium heat so the orzo simmers. Set a timer for 10 minutes. For smaller portion sizes, check after 8 minutes. Depending on how much water evaporates you may need to add a little more water.

Once the sausage has cooked, add the veggies. Place a lid on the pan to cook the veggies more quickly. Cook until the cauliflower becomes tender, between 4-8 minutes depending on how many servings you have.

After 10 minutes, check the orzo. It should be tender, but not mushy. If it still tastes a little firm in the center you can cook for a 1-2 more minutes. Once the orzo is at a consistency that you like you can plate it up. From start to finish this dinner takes roughly 15 minutes. Enjoy!
