What you'll be getting: 
Sausage Orzo and Veggies

Per Serving: 
5 oz Spicy Italian Sausage
135 g veggies (peppers, summer squash, cauliflower, carrots, tomatoes, onions) 
1/3 c dry orzo
2/3 c chicken broth (water, chicken, carrots, onions, salt and pepper)

Equipment needed: Pan with a lid, large enough for all of the ingredients

 

Start heating up your pan, when hot add the onions and sausage. Break the sausage up as you add it to the pan. Cook the sausage until it begins to gain some color. This will take roughly 2-5 minutes depending on how many servings you have. 

After 2 minutes your veggies will be starting to become tender, add the tomatoes. Return the lid to the pan and steam the tomatoes for 1-2 minutes. 

Add the broth and scrape off any fond and cover the mixture back up with the lid. Turn the heat down to a simmer and cook the orzo for 8-10 minutes.

(In the kitchen, a fond, from the French for "foundation" or "base", refers to the flavorful, caramelized bits of food and pan drippings that stick to the bottom of a pot or skillet after searing meat or vegetables.)

After your sausage and onions have gained some color, add the veggie mixture. The tomatoes will get added later, so keep those out of the pan for now. Place a lid on the pan. This will help cook the veggies faster. 

After your tomatoes have steamed for 1-2 minutes, add the orzo and incorporate it with the rest of the ingredients.

After 10 minutes your orzo will be cooked. if it appears dry you can drizzle a little water in it, and if there seems to be too much liquid you can let it sit without the lid for a minute or 2. Any excess liquid will evaporate or be absorbed by the orzo. From start to finish this dinner takes less than 20 minutes. Enjoy!
