What you'll be getting:

Sausages with Roasted Apples and Leeks

Per Serving

2 pork sausage links

150 g leeks, kale, and apples (tossed in white balsamic vinegar, nutritional yeast, salt, pepper, and avocado oil) 

125 g parboiled potatoes (tossed in nutritional yeast, salt, pepper, and avocado oil) 

Equipment needed: non-stick saute pan, sheet pan

Preheat oven to 400 degrees.

Lay everything out  on a sheet pan. When the oven reaches 400 degrees, place sheet pan in the oven and set a timer for 20 minutes. 

After 20 minutes, pull sheet pan from the oven. Transfer the sausages to a cutting board, slice into smaller pieces. Start heating up your sautee pan. 

Once the sausages are sliced, transfer everything into the pan. Saute for 2-4 minutes, until you notice the sausages getting a little more color. This will help blend the flavors of the sausage and the apples. 

Plate up after a couple of minutes of sauteeing and enjoy. From start to finish this dinner took 25 minutes.
