What you'll be getting:
Tofu with Roasted Veggies
Per Serving:
4 oz tofu
100 g cabbage and onions
150 g delicata and carrots
2 T lemon and onion seasoning sauce (lemon juice, safflower oil, fines herbes, nutritional yeast, onions)

Equipment needed:
1-2 sheet pans

Preheat your oven to 425.

When the oven reaches 425, place the squash and carrots on a sheet pan and into the oven. For 3-4 servings you will need 2 sheet pans. Set a timer for 15 minutes.

After 15 minutes, using a spatula, flip the squash and then add the cabbage and tofu. Set a timer for 10 minutes.

After 10 minutes, pull the sheet pan from the oven and drizzle half of the sauce over the veggies. Mix everything together.

Finish by plating up and drizzling a little more sauce over top. From start to finish this dinner takes roughly 25 minutes. Enjoy!
