Tofu and Veggie Green Curry

Per Serving:
3/4 c golden brown rice (fully cooked)
1 c simmering sauce (coconut milk, green curry paste, vegan fish sauce, liquid aminos, ginger)
125 g veggies (broccolini, carrots, peppers, onions, zucchini)
100 g firm tofu

Equipment needed: 1 pot large enough for all of the ingredients with the exception of the rice

Start heating up your pan/pot. When hot, add the veggies. Cook on a high heat for roughly 3-5 minutes. It is okay if they seem to be crowding each other a bit.


The rice is fully cooked and just needed to be warmed in either your microwave or on the stove. If you re-warm on the stove, add just enough water to moisten the rice and let it warm while you are cooking the curry. After the 10 minutes the curry will be ready. This is a mild curry, but if you prefer less spice to your food plate it up with less sauce. From start to finish this dinner takes less than 20 minutes. Enjoy!

After the veggies have cooked for a little bit, add the tofu and simmering sauce. Lower the heat to a low simmer and set a timer for 10 minutes.
