What you'll be getting:
Tofu Tikka Masala

Per Serving:
4 oz tofu (marinating in simmering sauce)
3/4 c cooked jasmine rice
150 g veggies (cauliflower, beans, carrots, onions, zucchini- with coconut oil)

1 c simmering sauce (tomatoes, coconut milk, avocado oil, turmeric, ginger, cloves, cinnamon, cumin, coriander, garlic, onions, nutmeg)

Equipment needed:
1 pot large enough for all ingredients, 1 lined sheet pan

 

Turn your broiler on high. As that is warming up, put the coconut oil in a pan and begin heating on high. When hot, add the veggies. Place a lid on the pan and lower to a medium heat. Cook for 15 minutes, stirring occasionally.

When the timer goes off, add the sauce to the veggies and pull the tofu from the oven and add that to the veggies as well.

When there is 10 minutes remaining on the timer, place the tofu on a lined sheet pan and place in the oven on a high rack. Not right up against the broiler, but close to it. 

Simmer everything together for 5-10 minutes. The rice is fully cooked and just needs to be warmed. After the curry has simmered you can put it on top of the rice. From start to finish this dinner takes roughly 20 minutes. Enjoy!
